Feta cheese cornmeal muffins

They’re healthy and light, easy to make and a great, yummy school snack!

There are some recipes all mothers swear by and can always rely on, every time they run out of new ideas and feel a bit uninspired in the kitchen.

I can totally relate to that never-ending struggle of having to figure out what to cook every day, I experienced it myself and it really isn’t easy. And although my daughter wasn’t a picky eater, she would always leave half of her food untouched, I guess that’s how much her little stomach could handle! That meant she was hungry every couple of hours. I can still remember her asking “what’s next?” once she’d see me get up to clear the table. Obviously, what she meant was that our next meal had to be something entirely different and always wanted to make sure I already had it all planned out. Oh, those were the days!

I was always looking for different ideas for fun recipes that would keep things interesting. Here’s where cheese and pastries came to the rescue. As simple as these ingredients are, they can make your life so much easier. It’s so easy to use them in so many delicious recipes and incredible snacks that never feel the same and can please even the pickiest child.

They can be perfect for breakfast, a healthy snack to bring to school or a side dish with any meal. They’re also amazing for children’s parties. Quick and easy to make, comforting and delicious, they make children happy, and the rest of the family too!

This is one of those classic fail-proof recipes I must have made a thousand times, which only proves how timeless it is. Even after all these years, those feta cheese muffins are still among our favourite savoury snacks. They’re healthy and light, easy to make and a great, yummy school snack!

You can also make them in different shapes, from Christmas trees to bears and daisies, it’s just super easy to find the perfect design for any occasion. There are so many silicone muffin moulds in all sorts of different shapes on the market and you know how much children love such fun little details!

What’s also great about these muffins is that you can make as many as you like and then simply freeze them in food bags. They’ll be there when you need them, all it takes is 10 minutes in the oven at 150C and they’ll be fresh out of the oven again.

Ingredients

10-12 muffins depending on size

6tbsp cornmeal

5tbsp all-purpose flour

1tsp baking powder

½ tsp salt

3 eggs

150ml olive oil

150ml milk or kefir

300g crumbled feta cheese

 

Silicone muffin moulds

Method

1. Preheat the oven to 185C. In a bowl, combine the flours, baking powder and salt. Blend well with a wire whisk. Stir in milk, olive oil and eggs and continue mixing with the wire whisk. The mixture has to be smooth and stretchy. Now add the feta cheese crumbles (or any other cheese you might prefer). Fill the muffin moulds 2/3 full (it can be helpful to work with single-use muffin moulds that your child can easily bring to school). Bake for approx. 30 minutes until golden.

2. You can bake as many muffins as you like and then freeze them. When you need them, remove from the freezer and put in the oven for 10 minutes. They’ll be fresh out of the oven again. They’re also great for children’s parties and a healthy and delicious option for a school snack.
